Table service staff — Uganda

Table service

Trays are carried balanced and at a safe height, never over guests' heads. Broken glass is swept up immediately with a brush and gloves, never bare-handed, and the area is marked off while it is cleaned. Serving alcohol follows the venue's rules and the organisers' decisions, particularly regarding minors.

Food hygiene

The cold chain is respected from transport to service: cold dishes stay chilled, hot dishes stay hot, and nothing is left at room temperature for hours. Equipment and hands are clean, raw and cooked foods kept separate, and leftovers that have stood in the open are not served again.
